Choc’n’Cherry Cooconut Ice Cream
Have you got a supply of frozen bananas in the freezer? I mean who hasn’t these days?
This dessert will take minutes to make up and the longest time will be allowing time for the bananas to defrost 5-15 minutes depending on size of pieces.
Ingredients & Method:
1 frozen banana
1 tbsp. coconut oil
1 tbsp. coconut milk / almond milk / hemp milk or milk of choice
BLEND THESE 3 together
Mix in 1 tbsp. cocoa nibs & 1 tbsp. desiccated coconut
1 handful fresh or defrosted frozen cherries blended to a puree (keep 3 aside for decoration).
Swirl the cherries through the “ice cream”
Spoon into a serving bowl and decorate with the 3 cherries and a few more cocoa nibs.
Cherries are an anti-cancer heath promoter controlling blood cholesterol levels, gout pain and arthritis pain. They are also a rich source of ellagic acid which is one of the most powerful weapons against free radical damage key in todays stressful world! How FABulous a dessert that serves you WELL!
