Pan fried sweet potato courgettie

2014-07-15 13.01.47Have you tried courgettie yet? We are addicted to it and its so easy to do!

Love your pasta but don’t love what it does to your tummy?

Then here is a great alternative “COURGETTIE” full of VIT A,B,C & E, potassium, phosphorus and copper . All good for bone and teeth formation and helping your kidneys function WELL!

The anti oxidants Vit C and Beta Carotene also have anti-inflammatory properties that make them helpful for conditions such as asthma, osteoarthritis and rheumatoid arthritis. where inflammation plays a big role.

The copper found in courgettes is helpful for reducing the painful symptoms of rheumatoid arthritis.

I also love using it as an alternative to wheat which is an inflammatory market for many people and stops them releasing belly fat!

So enough about the science – how do you make it?

Ingredients for 2:

1 large tablespoon coconut oil

getting my veggies on1 red onion – finely diced

1-2 garlic cloves finely choppedĀ (or frozen – sorry I like the convenience)

Finely chopped ginger (or frozen – sorry I still like the convenience šŸ˜‰ )

1 small sweet potato peeled and finely diced

2 large courgettes – spiralized (and guess what you can buy a spiralizer through my amazon shop!)

1 tbsp. pumpkin seeds (optional)

Bringing it all together:

Gently melt coconut oil in pan of choice

Add your onions and gently sautĆ© for 3 minutes and then add garlic and ginger – leave for another 3 minutes.

Add the finely diced sweet potato, pumpkin seedsĀ (if adding) and turmeric stir and cover for 5 minutes to soften

Add your courgettie stir through and gently cook for another 5 minutes, stirring through and serve!
